Upon Tahmed Sahib's request: Desi Style Omelete

Yes, I do have a good recipe for Desi Style Omelette.

2 Eggs Whisked vigorously with Sea Salt and Black Pepper: Use Red Chilli Pepper and Turmeric if you wish, but I prefer salt and Black pepper.

One fourth Onion: Diced Finely

One Roma Tomato: Seeded and diced finely

Green Chillies: 1 diced finely

Cilantro: A small handful diced finely

Green Bell pepper: Half Diced Finely

Optional: A few finely sliced pieces of Cheddar cheese

In a Large Frying Pan: Add One tablespoon Extra virgin olive oil.

Heat, and then add Onions. As soon as the onions get slightly golden, add the diced tomato, Green Bell Pepper, Green chilli.

Fry in oil for a minute until all veggies are limp.

Then pour the whisked eggs on top of the veggies and spread with spatula. Cook on that side on medium low heat.

Then flip the whole Omelette using a large Spatula.

COok on the other side, and at this point at the cheese on one half of the omelette and then flip the other side over on the cheesed side. Let cook on low heat for a minute or so lightly browning the omelete.

Serve with Whole Wheat Toast with a bit of cream butter, or Paratha with good Chai.

Nothing tastes or smells as good as the omlette fixed by mom 48 years ago and the aroma of parathas back then was altogether something else while I continue to reproduce and never succeeded bringing back that unique taste and aroma.

Dear Shore sahib,

I tried your procedure , but frying onions first didn't work very well and it was time consuming also.

Traditional omellete making procedure is that if we chop down all the igredients narrated by you ( green onions or small onions (chalots)from China are tender and good )

Tomato , cheese and bell pepper are all optional ...

We break two eggs in a bowl and with pinch of salt, black pepper and chopped ingredients we mix every thing thoroughly ...

We heat Non stick medium size frying pan on medium heat and apply margerine and then pour mixture from the bowl..

Turn the heat further low, slowly cook and brown one side and then flip it over to brown other side,..

All ingredients will become tender and juicey in this process,..

Fluffy omellete is ready

Shoresahib: I tried out the above recipe this mother's day morning for the missus. I ended up using the black pepper (rather than red pepper) option, and that was fine. Also, discovered too late that we were out of bell peppers - but it was a smashing success anyway, despite the missing ingredient.
