Shore Sahib's AB FAB Aaloo Gosht Recipe

Goat Meat: 2 Pounds

Red Pototoes: One pound

Onions: 2 Red ones Sliced

Garlic Chopped: 2 Tablespoons

Ginger: 2 tablespoons Julienned

Tomatoes: 4-5 Large Roma Diced finely

Olive Oil: Half Cup

Jalapenos: 3 Large with a slit cut in the middle

Spice Mixture: Grind the following spices in Coffee Grinder.

Sabut Dhaniya(Mustard Seeds): 3 tbsps

Zeera (Cumin): One Heaping tbsp

Green Cardamom: 4

Black Cardamom: 2

Cloves: 3

Stick Cinnamon: 1

Bay Leaves: 2 small or one large

Black Peppercorns: 15 or so

Grind the following spices to a fine powder, and then add half teaspoon Haldi and 1 1/2 to 2 teaspoons Lal Mirch, and Sea Salt to taste.

Preparation:

Put Onions, Ginger, Garlic, Goat meat, tomatoes and Spices in Pressure Cooker. Add 4 cups of water and cover and turn burner on to high. When the whistle goes off, lower the heat to medium and cook for another 15 minutes.
Then turn heat off and let cool until you can safely remove top.

Then take the Meat pieces out on a plate and reduce the Masala mixture on medium high heat after adding the half cup of olive oil and 3 Jalapeno pepper with a slit cut in them.

After the Masala releases oil, put in pieces of Potato and Bhoonofy for a few minutes. Then add the Meat pieces back to the cooker and Add two large glasses of water. Cover the pot with a plain lid and simmer of medium low heat for about ten minutes or until the potatoes get done.

Garnish with Finely diced Fresh Cilantro Leaves, and serve with Pita Bread,Naan, Roti or Steamed Rice.
