My new invention: Mediterranean Chicken Spinach Soup with Roma tomatoes and Garbanzo Beans

Two Frozen Chicken Breast

A pot full of water

Salt to taste

Freshly Cracked Black Pepper to taste

Whole Green Chillis: 3

One can Peeled Diced Roma Tomatoes

One can Garbanzo Beans drained and rinsed

5 cups Organic Baby Spinach

Lemons: 2


Add Chicken breasts to water. Bring to boil and simmer on medium low heat covered for 20 minutes.

Remove Chicken breasts from pot, and dice into fine cubes.

Add Chicken cubes back into pot. Add can of tomato and can of garbanzo beans. Add 3 green chillis, salt and pepper.

Simmer on medium heat for another 10 minutes.

Add 5 cups of baby spinach.

Simmer for another five minutes.

Remove from Heat.

When Serving, Sprinkle Freshly cracked Black pepper and sqeeuze one fourth of a lemon.

Serve with Wasa Multigrain Crackers.

Simply delicious and low calorie.
