The question should have been: Why Muslim women fully independent of doing so aren`t converting to christianity?
Since no data has actually been gathered on this area, one can only guesstimate. There are hundreds and thousands of female first generation Pakistani Americans, Pakistani Brits, etc. now living independently in the West. Although many of our young generation is no longer practicing Muslims, they have not converted to any other religion as well.
I can give you some personal experiences. A Christian nephew of a very well respected and decorated Christian Pakistani pilot from 1965 war viz. Flt Lt. Cecil Chaudhary (Sitara-e-Jurrat, Pakisan) married a Muslim girl. We happened to meet them in Toronto once at a Quran-Khwani in Toronto. His wife is a practicing Muslim with Muslim children, whereas the husband is Christian (His father is still in the PAF and is a decorated pilot too). I don`t know if he is a practicing Christian though.
A cousin of mine, whose Pukhtoon parents settled in England in the 50s, married her Hindu class mate. The whole family never visited Pakistan after that as they clearly knew their fate. My cousin and her husband did not convert. My cousin is a practicing Muslim and is raising her kids as Muslims, although if she visits NWFP, I am sure, a cousin will gladly put her to eternal peace. The Hindu husband is all accepting. We met them in England in 2004 ( and we agreed ith the phrase that love is blind). The knowledgable guy educated us a great deal on Hinduism. I cracked a joke that if I were in my teens, he would have converted me to Hinduism. He responded that my cousin was in her teens when she married him, nothing of that sort happened.
Perhaps some Indians on this site will educate us on any conversions of Muslim girls in Indian film industry. Apparently, many married their Hindu/Christian sweethearts.
You mentioned Irshad Manji. Man, she reminded me of Saleem Chauhan. She calls herself Muslim, but each of her articles and lectures is venomously anti-Muslim. I think that is attributable to the abuse she much have been put to by her father. She does not mention the abuse, but her book gives that part away. Her lesbianism is another pointer in that direction.

Gosh you have requested the history of huge contribution by the Parsee community to Karachi. There might be some other readers on this site who are more knowledgeable about Parsee contribution`s to Karachi than me.
The only part that I know is that after winning the war with the Talpurs of Sind, in 1820`s, the British asked the Parsees to come to this fishing port and serve their soldiers. Hence, we got the area of saddar, etc.
Parsees have always continuously contributed to the well being of the local population wherever they have been. My school BVS Parsee High School was founded in 1859, and is still a successful instituition. Then, of course we have Mama Parsee High School. So much so that during partition, Mohd. Ali Junnah requested the Parsees, and they obliged, to take in muslim students.
And the same goes for the hindoo contributions to the city of Karachi, which is always forgotten by the mohajirs who got to Karachi.

Urdu speaking bhaya community has taken a huge swath of Parsee charity land near Jubilee Cinema, and have built a masjid and a refugee colony on Parsee lands.
It is really sad to see that Altaf Hussain, who I believe is himself a Bihari, has nothing else to contribute, except hatred and disharmony amongst the citizen`s of Karachi. Whenever it suits the MQM`s fancy they side with freedom and progressiveness, and whenever it suits their fancy they are the first one to usurp other people`s properties.
