Some persian poet talked about love as,

Regarding a person`s better/higher/purer potential being tapped or as nargileh mentioned actualized after being coming across someone, there is a hymn to the effect.
I am a lamp to thee who beholdest me,

I am a way to thee a wayfarer.

This was my favorite part. It reminds me of the quote ``It is better to have loved and lost than to have never loved at all``. It is definitely a worthwile experience even without reciprocation (I say this from subjective experience!).
A Viennesse Psychiatrist named Viktor Frankl said that one of the most valuable ways to find a purpose or a meaning in our life is by ``loving someone``.
His definition of love : Helping someone see their true potential....helping them actualize it.
I thought that had a interesting parallel to what you said here:
``The “new you” is actually the person’s own latent potential that got triggered due to the interaction and presence of the other person.``
